Ingredients (for 4 portions) red curry with chicken:

  • 400 grams chicken fillet
  • 2 red pointed peppers
  • 400 grams mushrooms
  • 200 grams sugar snaps
  • 1 red onion
  • 2 tomatoes
  • 200 ml canned coconut milk
  • 2 tablespoons red curry paste
  • 250 to 300 grams brown or basmati rice
  • 1 lime
  • ½ red pepper
  • Chicken spices to taste
  • Pepper and salt to taste
  • Dash of olive oil

  • Cashew nuts
  • Fresh coriander

 

Preparation method:

  1. Cut the mushrooms, bell pepper, red onion and tomatoes into pieces. Finely chop the red pepper and clean the sugar snaps.
  2. Cut the chicken fillet into cubes and season them to taste with chicken spices.
  3. Heat a wok with a dash of olive oil. Add the red curry paste and let it heat up.
  4. Add the chicken fillet and fry until done.
  5. In the meantime, cook the rice in a pan with boiling water until done.
  6. Once the chicken is done, add the chopped vegetables and red pepper to the wok. Stir everything together and fry for 5 minutes on medium heat.
  7. After 5 minutes, add the curry paste to the chicken and vegetables. Mix everything well and fry for another 3 to 5 minutes on medium heat.
  8. Pour the coconut milk into the pan, stir everything together, cover and let it simmer gently for 10 to 15 minutes. Stir occasionally.
  9. Taste after 10 to 15 minutes to see if the flavors have been absorbed well and if the vegetables are al dente. If necessary, add extra curry paste, pepper and salt to taste.
  10. Cut the lime into wedges and serve with the curry and rice.
