Lightly bound asparagus soup

Ingredients for 6 portions of Lightly Bound Asparagus Soup:
- 50 grams of flour (organic)
- 50 grams of unsalted butter
- 700 grams of peeled asparagus
- 2 shallots
- 1.5 to 2 liters of stock
- 200 grams of smoked salmon
- Pepper and salt to taste
- Optional: fresh parsley and fresh chives
How to prepare Lightly Bound Asparagus Soup:
- Preparation of the ingredients: Finely chop the shallots and cut the asparagus into pieces. Heat the stock in a pan until it is very hot.
- Preparation of the roux: Heat the butter in a soup pan and add the finely chopped shallots as soon as the butter has melted. Fry the shallots for a few minutes and then add the flour. Stir everything together with a whisk and let the roux fry in the pan for 5 minutes.
- Adding the stock: Gradually add the hot stock to the roux while stirring continuously with a whisk, so that no lumps form. Add the asparagus pieces to the stock and let it simmer gently for 10 to 15 minutes, or until the asparagus is soft.
- Seasoning: Taste the soup and add salt and pepper to taste if necessary. Cut the smoked salmon into small pieces and add it to the soup. Serving: Ladle the lightly bound asparagus soup into bowls and garnish with some finely chopped parsley and chives for an extra touch of colour and flavour.
