Ingredients: Sweet potato brownie
- 400 grams sweet potato
- 100 grams oatmeal
- 30 grams cocoa powder
- 50 grams protein powder (flavor: chocolate)
- 2 eggs
- 30 grams pitted dates
- 1-2 teaspoons vanilla flavor’
- 1 sachet baking powder
- Pinch of sea salt
- Optional: dash of milk
Additions: Sweet potato brownie
- 50 grams of hazelnuts
- 50 grams of dark chocolate, our preference 85%
Sweet potato brownie variations:
- Replace hazelnuts with other nuts such as walnuts, peanuts, or almonds.
- Replace hazelnuts with peanut butter.
How to prepare sweet potato brownie:
- Preheat the oven: Preheat the oven to 180 degrees Celsius.
- Prepare the sweet potato: Peel the sweet potatoes and cut them into pieces. Boil the sweet potatoes for 15 minutes until done. Let them cool.
- Soak the dates: Place the pitted dates in a bowl of hot water and let them soak for 10 minutes.
- Make oatmeal: Grind the oatmeal into oatmeal in a food processor.
- Combine dry ingredients: Sift the oatmeal into a bowl and add baking powder, egg white powder, cocoa powder, and a pinch of salt. Mix well.
- Puree sweet potato and dates: Puree the cooled sweet potato together with the soaked dates in a food processor until smooth.
- Mix the ingredients: Add the smooth mixture to the bowl with dry ingredients. Also add the vanilla aroma and eggs. Mix everything well. If the batter is too thick, add a small dash of milk.
- Add nuts and chocolate: Finely chop the hazelnuts and dark chocolate. Add them to the batter and mix well.
- Bake the brownie: Line a baking tin with baking paper and pour the batter into it. Bake the brownie for 35-40 minutes at 180 degrees Celsius. After 35 minutes, prick with a skewer; if nothing sticks to it, remove the brownie from the oven and let it cool. If something does stick to it, leave the brownie in the oven for a while longer.
