Recipe: Grilled Chicken Salad with Yogurt Dressing

2 servings

Salad ingredients:

  • 2 heads of little gem, washed and cut into strips
  • 2 chicken thighs (total 200–300 grams)
  • 60 grams of Parmesan cheese, shaved or grated
  • 1 avocado, sliced
  • 1 red onion, thinly sliced
  • 100 grams of cherry tomatoes, halved
  • Salt and pepper to taste
  • Butter

Yogurt dressing ingredients:

  • 100 grams Greek yoghurt (full fat)
  • 1 teaspoon mustard
  • 1 small clove garlic, pressed
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • Salt and pepper to taste

Preparation method:

  1. Season the chicken thighs with salt and pepper. Heat some butter in a frying pan and fry the chicken over medium heat until cooked and golden brown (about 6–8 minutes per side). Let it rest for a while and then cut into slices.
  2. In the meantime, chop the little gem, red onion, cherry tomatoes and avocado.
  3. Then mix the yoghurt, mustard, crushed garlic, lemon juice, parsley and chives in a bowl. Season with salt and pepper.
  4. Divide the little gem over two plates.
  5. Divide the chicken, avocado, red onion and cherry tomatoes over it.
  6. Sprinkle with Parmesan cheese.
  7. Spoon the dressing over it or serve separately.
