Ingredients: homemade carrot cake
- 120 grams oatmeal
- 50 grams almond flour
- 4 eggs
- 2 scoops (vegan) vanilla protein powder
- 150 grams low-fat cottage cheese
- 2 tablespoons maple syrup
- 15 grams baking powder
- 1 teaspoon vanilla flavoring
- 2 teaspoons cinnamon
- Pinch of salt
- 150 grams grated carrot (or carrot julienne)
- 30 grams walnuts
Topping:
- 100 grams low-fat cottage cheese
- 50 grams cream cheese
- 10 grams vanilla protein powder
- Dash of vanilla flavoring
- 10 grams walnuts
Preparation: homemade carrot cake
- Preheat the oven to 175 degrees Celsius.
- Grind the oatmeal into oat flour in a food processor.
- Mix all the dry ingredients (egg white powder, oat flour, almond flour, baking powder, salt and cinnamon) in a bowl.
- Beat the eggs in another bowl for about 4 minutes. Add low-fat cottage cheese, maple syrup and vanilla flavouring to the eggs and mix well. Then add the dry ingredients to the egg mixture and stir well.
- Chop the walnuts finely and grate the carrot if necessary. Add both to the batter and mix well.
- Line a cake tin with baking paper and pour the batter into it.
- Bake the carrot cake in the preheated oven for 40 minutes.
- Check with a skewer whether the cake is done. If nothing sticks to the skewer, the cake is done. Let it cool.
- In the meantime, make the cream cheese frosting by mixing cottage cheese, cream cheese, vanilla flavouring and egg white powder. Top the cooled carrot cake with the frosting and chopped walnuts.
